- Black soup with apples from Orelund, baked terrine of foie gras, and confit of gizzard
- Alternatively: Shellfish bisque with brunaise, pickled ginger apples, and cold-pressed rapeseed oil from Gunnarshög

Main Course: Whole roasted goose breast and rillette with red cabbage & Brussels sprouts from Åhus, Orelund apples, and raw sugar-fried potatoes
